Strawberry cake

Ingredients
- 7 - eggs
- 200 g fine pastry flour
- 200 g sugar
- 1 pinch of icing sugar
- 1 cube of fresh strawberries
- 340 g Hero strawberry jam

- cake mold with 22cm diameter
Directions
1. Preheat the oven to 180 degrees. Grease a mold with butter, then sprinkle with flour and turn it around to remove excess flour.
2. Beat the eggs in a large bowl, add the sugar and whisk all together until almost triple its volume.
3. Sift the flour through a sieve or sift it directly over the egg mixture and sugar in small amounts. Stir gently with a spatula, to incorporate all the flour.
4. It is essential that the flour is added with great care to avoid that the air mass that we have introduced during whipping is lost.
5. Bake for 15-20 minutes, without opening the oven at any time. When you see the cake begins to be brown, use a skewer and stick it into the center of the cake to check how baked it is. The skewer should come out clean, with no trace of raw dough. If not, continue baking for a few minutes and re-check.
6. When ready, remove the cake from the oven and let it cool down in the mold for 20 minutes. Carefully remove the mold from the cake.
7. Let it coold down completely and cut it in half with a large serrated knife. Spread Hero strawberry jam on the inside of one-half of the cake and place strawberries (previously cut in half) on top.
8. Cover it iwth the other half of the cake. Sprinkle the icing sugar on top and garnish with the remaining sliced strawberries.
